Koroneiki olives are much smaller than other varieties; this produces some challenges in the mill. These particular koroneiki were also very green, which adds even more complexities. Several times during this milling session, we looked at each other and exclaimed: “We are EARNING this batch today!”
Although the fruit is tiny, koroneiki has one of the highest oil contents of any olive variety! This batch is deeply herbaceous and woody—think of hardy herbs like rosemary, thyme, and sage. There’s also a peppery finish, evidence of potent biophenols.
